Breakfast is the most important meal of the day for many, particularly for children and for those who work outside of your home. Unfortunately, in our household not so much. My husband and I don’t normally eat breakfast. We tend to be more into brunch. Normally, my husband has freshly brewed coffee only and I would have my hot chocolate. One advantage of working from home is that you control your own time so you can take a break whenever you want. Most of the time, we don’t get around to cooking anything until about 10 or 11 am.
I garden during summer so we usually have an abundance of tomatoes. You can’t go wrong with freshly picked, organic tomatoes from your own garden. They taste so good. That is why I make a lot of omelets. Sometimes, I even have an omelet for my supper.
My husband loves his omelet with lots of cheddar cheese topping. I find cheese to be a great alternative to salt. Since he can’t eat foods with high sodium, I use cheese or butter on his food to add flavor.
The above picture shows all of the ingredients cooking before the mild cheddar cheese topping is added. The cheese will be the last ingredient when the omelet is about ready to be served. It became my husband’s new brunch meal favorite. He says, he doesn’t mind having it every day for a week.
